Xanthan gum is produced by the fermentation of simple sugars by the bacteria Xanthomonas campestris. Direct Chems provides BP/USP/FCCIV Food Grade Xanthan gum which can be used as an ingredient for vegan/vegetarian and gluten free recipes. Applications
Sauces
Xanthan gum will work in liquid of most temperatures, it has a neutral flavour so can be combined with foods without altering the taste. To thicken sauces, simply blend the Xanthan gum into the desired liquid and it will easily improve the viscosity. The more powder added, the thicker the sauce will be.
Gluten free goods
Xanthan gum can be used for cake and bread making as it will help increase consistency and improve elasticity texture. It will eliminate ‘crumbling’ but binding all the ingredients and keeping the structure intact. It ensures the ingredients are fluffed to a suitable point and prevents them from separating. A little goes a long way so you can add 2 teaspoons for every 150g of flour.

Vegan, Low Fat, Sugar free, Gluten free Chocolate Syrup
Whisk together 1 cup (80g) cocoa powder and 3/4 Tsp Xanthan gum. Pour 2/3 cup boiling water while whisking vigorously until smooth. Add 1 tsp of vanilla paste and whisk in 1/2 cup (150g) Direct Chems glycerine. Pour into jar/ container of choice and enjoy.

Low-Fat Ice Cream
Xanthan gum helps prevent iciness and improves creaminess.
Ingredients:
- 2 cups milk (or non-dairy alternative)
- 1 cup cream or half-and-half (or more milk for lower fat)
- ¾ cup sugar
- 1 tsp vanilla extract
- ½ tsp xanthan gum
Instructions:
- Blend all ingredients thoroughly until smooth.
- Chill mixture for 1–2 hours.
- Pour into an ice cream maker and churn according to instructions.
- Freeze for firmer texture.
